BERBERE - BAKU ETHIOPIAN SPICE MIX
This magical mixture is one of the finest curries I have found. As with other good curries, the flavors are so deftly blended that it become impossible to tell them apart. I have yet to find a meat that it is not well suited for. There are thirteen different spices in this mix so I generally make enough for two recipes worth.
All spices can be found at the local grocery store.
Berbere / Bako / Baku
8 tbsp Paprika
2 tbsp Salt
2 tsp Ground Ginger
2 tsp Onion Powder
1 tsp Ground Fenugreek
1 tsp Ground Cardamom
1 tsp Ground Coriander
1/2 tsp Nutmeg
1/2 tsp Garlic Powder
1/4 tsp Ground Cloves
1/4 tsp Ground Cinnamon
1/4 tsp Ground Allspice

Optional
1 C dried Chilies: This makes it very hot and if I include it in the recipe I will be the only person eating it. My sincere suggestion is to put the chili powder on the table and allow everyone to add their own.
