BERBERE - BAKU ETHIOPIAN SPICE MIX

This magical mixture is one of the finest curries I have found. As with other good curries, the flavors are so deftly blended that it become impossible to tell them apart. I have yet to find a meat that it is not well suited for. There are thirteen different spices in this mix so I generally make enough for two recipes worth.

All spices can be found at the local grocery store.

Berbere / Bako / Baku

  • 8 tbsp Paprika

  • 2 tbsp Salt

  • 2 tsp Ground Ginger

  • 2 tsp Onion Powder

  • 1 tsp Ground Fenugreek

  • 1 tsp Ground Cardamom

  • 1 tsp Ground Coriander

  • 1/2 tsp Nutmeg

  • 1/2 tsp Garlic Powder

  • 1/4 tsp Ground Cloves

  • 1/4 tsp Ground Cinnamon

  • 1/4 tsp Ground Allspice

Optional

  • 1 C dried Chilies: This makes it very hot and if I include it in the recipe I will be the only person eating it. My sincere suggestion is to put the chili powder on the table and allow everyone to add their own.
